Note that I've tried to do this with one open in the desktop mac app, another in Safari but it causes all sorts of issues and locks up the computer.

That's not what happened to me, Tacho. In all cases, I was putting text in a multi-line text field. And I'm pretty sure it was always on the iPad app.
