Set the table in design mode " allowed to read" to only be read buy say an editor and make that user a lower ranking to admin. There are 2 default levels/ admin and editor but you can set more

Yes if you don't want to show permanently, then you can untick them in form edit mode you will see these options on the left of the form if you don't want them on selected forms etc.…
