When building a new data base I created a Contacts table with name and surname, should I always create subsequent sub tables from the initial table, what happens if you create a sub table from a sub table?

Subtables are all about compostion / containment.  Given the "Contacts" template database. You will see subtables for Phone Numbers and Emails....If you delete the main table row.. it auto deletes the subtable rows.
