Could anyone tell me how I control what fields appear in these reference fields? I“d like to change what I see here...

    Tap on the header of the table. A dialog will appear where you can select the fields to be displayed.

    If you want your modifications to hold, you should first tap the wrench in the upper right corner (making it surrounded by a red square). Don“t forget to tap it again after entering your modifications.
